"Villa L'Olmo: A Tribute to Tradition and the Historic Bond with Impruneta "
Diadema announces that 2520 bottles of its prestigious Villa L'Olmo, a blend of Cabernet Sauvignon, Cabernet Franc, and Merlot, have been laid to rest for six months in the historic filtration gallery of Impruneta. This choice represents a tribute to the local winemaking tradition and the territory. The gallery's ideal environmental conditions allow the wine to develop unique complexity and depth. Available starting January 2025, Villa L'Olmo is a symbol of excellence, connection to the land, and respect for the history of the Giannotti family, who have influenced the Impruneta area since the 1700s. The family residence, Villa L'Olmo, represents an important historical and emotional landmark, and the wine label features its image.

VINIFICATION
The carefully selected grapes are harvested manually when perfectly ripe, after delicate destemming, the grapes are softly pressed and vinified in containers at a controlled temperature. Fermentation is carried out by yeasts naturally present on the grapes and contact with the skins is prolonged for approximately 4 weeks, during which daily pumping over is carried out with the aim of extracting the noble substances contained in the skins. Once the skins and the wine have been separated, the malolactic fermentation begins which occurs spontaneously, partly in steel and partly in barrique. This is followed by refinement of the individual varieties for approximately 16-18 months in French oak barriques. The wine is not subjected to clarification or stabilization to maintain its organoleptic characteristics unaltered. It is then bottled and subjected to subsequent refinement for at least 6 months before being placed on the market.

TASTING NOTES
Wine with a typical intense ruby red color. On the nose stand out notes of small ripe red fruits, sweet spices and tobacco. On the palate it is well structured, enveloping and with a pleasant fruity aftertaste which gives it pleasant drinking and persistence, an elegant wine, with excellent structure and tasting complexity.
